Ok Rock, I know you have made this but never posted it. So I will!
No fancy smoker? The old critics here bitched me out for using my Blue Ember gas grill for smoke cooking! But for smoking a big fat steak using this technique, all you need is a gas grill, tin foil and a hand full of wood chips for smoked meat to rival any hard core BBQ'ers results!
Ask your butcher to cut you a 2.5 to 3 lb trimmed top sirloin steak
Soak wood chips ( I used apple wood) For a few hours.
Put your wood chips in a tinfoil packet and punch some holes in the top.
Get grill started, I got mine up to 600 degrees!
Put wood foil packet of chips on one side of the grill.
Meanwhile, brush the steak with EVOO and liberally add S&P . let steak get to room temp. By that time your wood chips should start smoking.
Sear the steak for 2 minutes per side, Shut off all burners other than the one under the chips and move the steak to the other side. Cook flipping every 5 minutes till done. Mine took 25 minutes to get to 125 then tent with foil for 10 minutes.
I made a steak sauce for this better that you can get at any store, want the recipe? OK here it is!
Sweat 1/2 cup diced onion, 1 TBSP minced garlic in 1 TBSP Evoo for 5 minutes.
Stir in: 1/4 cup tomato Paste
1 Tsp anchovy paste
Cook for 2 minutes
Stir in:
1/2 cup water
1/2 cup each Whatsthishere sauce and White vinegar
1/2 cup brown sugar
1/4 cup each soy sauce and lemon juice
2 TBSP yellow mustard
2 TBSP minced chipotle peppers in adobo sauce
Bring to a boil, lower heat to simmer and reduce to abot 1 cup - 20 -25 mins/
Let cool then strain.
