An oldie but a goodie!! This is kick ass chicken, and you will not have to worry about vampires!! 40 Cloves of garlic!

The total meal had some Italian string beans, roasted red potatos and some genuine garlic bread.
This is to die for!

Italian string/green beans

Ingredients
1 lb fresh string bean
1 tablespoon extra virgin olive oil
1 tablespoon unsalted butter
1 garlic clove, minced
1/3 cup Italian style breadcrumbs
1/2 teaspoon dried oregano
2 tablespoons parmesan cheese
salt and pepper (to taste)
Directions
1Wash and trim fresh string beans.
2Add string beans to a pot of boiling water.
3Cook until soft and drain water.
4In large frying pan, heat butter and olive oil over medium heat and add minced garlic.
5Let garlic sautee in butter and oil until a light golden brown and add string beans.
6Stir, coating all the string beans with butter and oil.
7Sprinkle string beans with bread crumbs and stir, coating all of the string beans.
8(If it's a little dry add some more oil) Sprinkle with parmesan cheese, oregano, salt and pepper.



Roasted red potatos

INGREDIENTS (Nutrition)
3 pounds small red new potatoes, halved
1/4 cup olive oil
1 teaspoon Salt and freshly ground black pepper

DIRECTIONS
Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet or jellyroll pan.
Roast until tender and golden brown, about 30 minutes (check after 20 minutes). Transfer to a serving dish.



And the piece with resistance..- but remember, when this dish is done, the oil in the pan is infused with garlic and the garlic is baked sweet and soft. So, use the garlic like butter. When the meal is done, turn the oven to broil and spread the oil from the pan on the bread, then spread the garlic cloves like butter on the bread. Put in the oven( a little longer than I did) until brown on top, the best garlic bread ever!!!

Ingredients
thighs and legs, 8 peices
1/2 cup plus 2 tablespoons olive oil
10 sprigs fresh thyme
40 peeled cloves garlic
Salt and pepper
Directions
Preheat oven to 350 degrees F.

Season chicken with salt and pepper. Toss with a 2 tablespoons olive oil and brown on both sides in a wide fry pan or skillet over high heat. Remove from heat, add oil, thyme, and garlic cloves. Cover and bake for 1 1/2 hours. Check after 1 hour, you want to be at least 185 degrees.

Remove chicken from the oven, let rest for 5 to 10 minutes
