I'm a fan of going to Wal-Mart (or your local grocery store) and buying a rotissarie chicken. You can also get some good bread and lettuce & tomatos, if you're into that sort of thing.
At that point you might as well open a can of bacon and make club sandwiches.
BLT with a side of chips.
Grilled cheese with a side of tater tots.
PB & J with a glass of milk
Chef salad with romaine lettuce, tomatos, sliced american cheese, ham and turkey with Thousand Island dressing
Cheese or Western omelette
These are my quick dinners when I don't feel like cooking.
1 fresh tuna steak 5.99
1 package corn tortillas 2.39
1 container chunky salsa 3.99
1 container guacamole 5.99
1 lime .50
Heat grill pan to high heat. Rub olive oil on tuna steak. Grill both sides, 1 minute or so each. Longer time if steak is thicker than an inch and a half. Place tuna on cutting board. Cut like regular steak into strips along the bias.
Wrap a stack of 12 corn tortillas in foil and heat in oven. 300 for 5-8 minutes.
Assemble soft taco. Optionally served with 7oz Coronitas, or any light ale.
The only cooking is the tuna, and you just grill the outside, the middle is still pink. It's quick, tasty, and it has something warm in it. Eating cold food never quite hits the spot. A cheaper version of this recipe substitutes black beans from a can for guacamole with no adverse results.
No plates, only one pan and some utensils. Anything easier and I would have to go with Popeye's red beans and rice and some biscuits.
