  1. #1 Help, need suggestion for easy to make, tasty chicken recipe

    We're having friends over to the house Saturday and need a suggestion for a tasty chicken casserole type recipe that's easy to make and not too spicy. They have very bland taste, but don't want to just dump Campbell's cream of chicken soup over chicken breasts, but may have to resort to that.

    Would greatly appreciate a recipe that is tried and true.

    Bread with onion powder, wrap each piece with bacon and bake for 1.5 hrs at 350.

    Pseudo Italian:

    Chicken

    Rotini pasta (regular or whole grain)



    Alfredo Sauce



    Parmesan Cheese.

    Cook rotini pasta al dente. Put in casserole pan (glass or ceramic). Add cooked chicken (sliced or shredded). Cover with Alfredo sauce. Add Parmesan to taste or allow guests to add it themselves.

    I make that one all the time, you seldom have leftovers but if you do it makes great chicken sandwiches.

    boil the chicken, use the stock to make the rice, dice the chicken toss with the rice and you are done. You can add peas, carrots, and water chestnuts if you like.

    PS, if you really want to test your heart, slice a mild sausage and toss it in there too.

    I'd be afraid to make a casserole for these friends. Too chancy.

    How about baking a whole unstuffed chicken in the oven. Served with whipped mashed potatoes, peas, and gravy.

    Can't get more "bland" flavored than that. Actually, not bad tasting either, especially when served with a hot biscuit of some kind.

    Forgot to add, To still make it look festive ...

    Add to one edge of chicken platter, a few over-lapping half slices of tomatoes with a sprig of parsley tucked in between each half.

    Sparingly, sprinkle some paprika on bowl of whipped potatoes, and toss a few toasted almond slices on the peas... and serve the hot biscuits in a basket lined with a red or green napkin!

    Pour copious amounts of white wine, and even you two will be able to enjoy it as well!

    For the peas ... pour a tiny amount of melted butter/margarine over them to make them look shiny, and more appetizing, then sprinkle with toasted almonds.

    One more post and outta here. Mr. ABC is on his way home from tennis!

    For a simple classic dessert, they can ignore if they choose.

    Some Port wine ... cheese ... nuts ... and slices of fresh fruit!
