    Made this for supper tonight-

    3 bottles (36 ounces) ale- I used Boulevard Pale Ale, since that is what I had on hand
    1 quart (32 ounces) whole milk
    2 cups shredded extra-sharp Cheddar cheese
    1 small onion, diced
    2 cups bacon bits - store-bought (hat tip to franksolich) or homemade
    1 stick butter (no substitution!)
    1/2 cup flour
    2 tsp Worcestershire Sauce
    1/2 tsp salt
    Black Pepper to taste

    1. In a cast iron Dutch oven, melt the butter over medium heat.

    2. Add the onions, cook until soft (7-10 min).

    3. Whisk in the flour and cook for 2-3 minutes, whisking frequently and scraping the bottom and sides of the Dutch oven to avoid scorching.

    4. When the flour starts to turn brown, whisk in 3 bottles of ale (drink the remaining ale while you cook), the Worcestershire sauce, and the salt. Whisk until the flour mixture is dissolved.

    5. Continue to cook over medium heat, stirring and scraping the bottom and sides every 2-3 minutes, until the mixture begins to boil.

    6. Add the milk and stir thoroughly. Reduce heat to medium-low. The soup will begin to thicken as it cooks. Scrape the bottom and sides regularly as you stir.

    7. When the soup begins to steam, but not yet boil, add the shredded cheese and bacon. Stir continuously for 2-3 minutes until the cheese is completely melted into the soup. Remove from heat, add black pepper to taste.

    Serve with crusty bread and the remaining ale, if you didn't drink it all already.
