Time to dust off this forum again!
Found a tasty middle eastern chicken recipe that was dying to have me try it. Top it with a spiced up yogurt sauce and all was good. It's not in the recipe but I blasted a few squirts of siracha sauce in the marinade and the yogurt sauce. What can I say, every thing needs some heat!
Chicken:
2 tablespoons fresh lemon juice
1 teaspoon curry powder
2 teaspoons extravirgin olive oil
3/4 teaspoon salt
1/2 teaspoon ground cumin
3 garlic cloves, minced
1 pound skinless, boneless chicken breast, cut into 16 (3-inch) strips
Sauce:
1/2 cup plain 2% reduced-fat Greek yogurt
2 tablespoons tahini < I didn't have this
2 teaspoons fresh lemon juice
1/4 teaspoon salt
1 garlic clove, minced
You also need:
4 (6-inch) pitas < I used some flat bread that was on hand
1 cup chopped romaine lettuce
8 (1/4-inch-thick) tomato slices
1. Preheat grill to medium-high heat.
2. To prepare chicken, combine first 6 ingredients in a medium bowl. Add chicken to bowl; toss well to coat. Let stand at room temperature 20 minutes.
3. To prepare sauce, combine yogurt and next 4 ingredients (through 1 garlic clove), stirring with a whisk.
4. Thread 2 chicken strips onto each of 8 (12-inch) skewers. Place kebabs on a grill rack coated with cooking spray; grill 4 minutes on each side or until done.
5. Place pitas on grill rack; grill 1 minute on each side or until lightly toasted. Place 1 pita on each of 4 plates; top each serving with 1/4 cup lettuce and 2 tomato slices. Top each serving with 4 chicken pieces; drizzle each serving with 2 tablespoons sauce.
Marinade and skewered and on the grill
Yummo

That really looks good. How would you rate the recipe on a scale of 1-10?
Thanks for dusting off the recipe thread. We need something pleasant to distract from all the horrors in the world today.

I would rate it right up there with......I will do this again!!! I am on another weight loss kick, but starting way in the hole! My new sedentary lifestyle let me balloon to 274 lbs, but at 5'9" that's not so bad, I have big bones!
274 last sunday and this past sunday 266. I am going to make that old promise I made tears ago, when I hit 220......A 2lb steak is my prize. But till then its time to try to make diet food taste good.

Just do what I did - avoid anything white (potatoes, pasta, rice). It's really easy once you get used to it, which takes a couple of weeks. I lost 55 pounds in 9 months, which turned out to be too much and I actually HAD to gain 20 back. Since you're a guy it should go even faster.
