    These darned things have taken over Florida and east coast waters. They're destroying all the native fish. So here's the new plan--eat them. But I wouldn't want to be the one cleaning them. Their spines are venemous but they say the fish is very tasty.

    Fluffy Battered Lionfish

    Ingredients
    • 4 fillets lionfish
    • 2 eggs
    • 1 1/2 cups pancake mix
    • 1 lemon pepper
    • 2 cups milk
    • 1 cup mayonnaise
    • 1/2 cup hot sauce
    • Salt and pepper to taste
    • Fresh cilantro to taste
    Directions:
    1. Prepare the fish by lightly washing and patting dry.
    2. Take pancake mix, lemon pepper, milk and egg and mix together.
    3. Dip the lionfish with slits cut on the side in the batter then deep fry.
    4. Make a dipping sauce out of mayonnaise, hot sauce, salt, pepper, and finely chopped fresh cilantro.
    5. Serve with fried shoestring potatoes, cole slaw, and a slice of lime.

    I love fish and ships, one of my all time favorites.

    Have you ever tried beer battered fish/shrimp?

    It's made with yeast. Cooks up light, fluffy and crispy.

    Do you wear gloves when cleaning those lionfish?

    I don't know, would be too afraid to touch those things. They're pretty venemous if you touch those things that look like porcupine spines.

    They're doing anything and everything to get rid of those things, an invasive species. they've also opened them up to spearfishers.

    From what I hear, none of the invasive species in the Great Lakes are tasty. The asian carp are scary the way they jump, and the lamphrey eels look disgusting.

    I just did a quick search and read for "Asian carp recipes" and there are quite a few. They seem to be okay, but they have a lot of bones.

    I know canned salmon has a lot of bones in it, but they disintegrate and turn to mush when you eat them. If the carp was pressure cooked, wouldn't it make a good pet food source? What about a fertilizer?

    Awwww....I had a lionfish when I kept a salt water tank....their spines are poisonous...I wouldn't eat them.
