Sorry camera broke before I started this, just fixed it so only finished photos when cooked.
Needed simple and didn't want the slow cooker and it's been raining so no grill!
preheat oven 500 degrees
Put roast (mine is 8 Lbs,) in a brine of 2 qts water, 1 cup of sugar and 1 cup of kosher salt, 1 cup of franks red hot sauce and about 10 smooshed garlic cloves whisk to mix let sit as long as yoy can, I had mine in for 4 hours.
Take pork out of brine and I used Adobo for a rub then set fat side up in a roasting pan with rack and add 2 cups of brine fluid in pan.
Place in 500 oven for 20 minutes then turn down oven to 325 for 30 minutes per Lb, So far mine is in for 1.5 hours.
Will put photos in during the hockey game, around 11 tonight.

We made a whole pork shoulder 3 days ago, the first night we ate it with sweet potatoes, second night pork and refried been burritos, tonight we had pork and potato burritos, tomorrow it will be pork and Spanish rice burritos.

Okay new update after 2 hours I just added 2 more cups of water, The pan was drying out.

I made pork shoulder on Wednesday. Braised it with baby portabellos and onions...with thyme, a bay leaf and some cumin. Oh, and a can of Coke..then served it on a flour tortilla with some tomatillo sauce, chopped tomatoes and a little sour cream.
I think they're called carnitas...they were yummy!
