    We wanted some cornbread to go with the leftover chili I made from my leftover pork roast and I have been dying to use the new cast iron skillet I got for Christmas. Came out killer good moist and sweet with just a hint of jalapeno. Oh I am now stuffed, Can't wait for breakfast...........Cornbread and syrup!!


    2 cups cornmeal, yellow or white
    1 cup all-purpose flour
    3 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon salt
    1 tablespoon sugar, optional
    1 cup buttermilk
    3 large eggs
    1 can (approx. 15 ounces) cream-style corn
    4 tablespoons butter, melted
    1 Tablespoon minced jalapeno

    Grease a 9-inch square baking pan or iron skillet. Heat oven to 425°.
    Combine the cornmeal, flour, baking powder, soda, salt, and sugar in a large mixing bowl.
    In another bowl, whisk together the buttermilk and eggs; stir in the cream-style corn, jalapenos and melted butter.
    Stir the wet ingredients into the dry ingredients just until blended.
    Spoon into the prepared baking pan or iron skillet.
    Bake for 20 to 25 minutes, or until golden brown and the cornbread springs back when lightly touched with a finger.

    It looks delicious. I don't have a cast iron skillet. Would it still be OK to bake in a square pyrex dish? I know it won't taste as good, but running out of room in my kitchen for anything else in those cabinets.

    I've made this without the jalapeno's...so good...I used a pyrex as I didn't even think of doing it in my cast iron, which I'm sure makes it even better!

    Oh, and it took you 2 beers to make this recipe?


    Now I want a beer! Lately, I've been liking Shock Top and Blue Moon with an orange slice.

    That sounds good. I like to make cornbread with white beans or on top of tamale pie.

    SLW, just fine in a baking dish, I just had to try out my new cast iron skillet, Next try will be frying up some Tennessee chicken!

    As to the beer, a Stella in a chilled Stella glass!!

    Used the grill today will post later, too busy with football and the hockey game!

    I used Amazon prime to have a couple cast iron skillets delivered to my door with free shipping. Great investment.

    I made dinner tonight. My hands are locking up due to a neck nerve root being crushed. I managed to only drop and break two bowls.

    I delivered my mom grilled steak and garlic noodles. When I got back to my house, I went to fix myself a plate and that hit the floor also as soon as I went to put it on my table. It did not break, but it went into the trash.
