Cool way to make a breakfast! Its not hard at all and its a 1 pan meal! You can add anything you want, like some satueed mushroom and onion or pesto, the skies the limit!
Pre-heat oven to 350.
You need a nonstick 6 place muffin tin.
6 eggs
chopped up tomato
parmesan cheese
Salt and fresh black pepper
chopped chives
Line each place in the muffin pan with 2 thin slices of ham criss crossed, put chopped tomato and cheese in ham cup. Crack an egg in a separate bowl and pour egg into ham cup, top with S & P and chopped chives.
Bake for 15 minutes for nice runny yellows!
