Thought I would post this easy one pot meal that we made last nite. Any firm fish filet would work, we used perch. Not a book recipe I just threw this together and it was pretty good. Oh yeah, I also picked up a dozen Cedar Key clams (they are the best!) On second thought, a bowl of rice would have made the dish better, but I didn't make any.:o
1 sliced white onion
1 green pepper thin sliced
4 cloves garlic minced
1 large can diced tomatos
firm fish filets
sliced button mushrooms
1 dozen clams
2 tbsp evoo
S&P to taste
Season the filets with essence.
On medium heat saute the onions and pepper in evoo for about 8 minutes. Add the garlic and stir for 1 minute. add the canned diced tomatos and simmer for 20 - 25 minutes uncovered.
Season and stir.
add the mushrooms, fish and clams, cover and simmer for about 20 minutes or until the fish flakes and the clams are open.
Good easy 1 pan meal!
Get it all in the pan
Only thing missing is the rice!

Looks great, I would add mussels, calamari and shrimp and serve it with linguine.
Otherwise knowns as Zuppa di Pesce :D
