    Time to use up any thing you got leftover! I like to make this the old fashioned way, you could always jus put it all in a baking pan and bake it but its not the same.

    This is what I had hanging around, you can put in anything!
    6 large eggs
    1 can rotel (drained)
    1/2 onion diced
    2 smoked chorizo sausages diced
    1 clove garlic minced
    american cheese
    cheddar cheese
    3 Tbs butter
    S & P to taste

    In a bowl whisk the egs with a little milk (or water or mayo) until very...um... whisked!
    Add the cheeses, rotel and S & P, mix well.
    Saute the onion and chorizo in the butter, about 5 - 6 minutes. Add garlic and cook 1 more minute.
    Lower heat to very low and add the egg mixture and give it a stir.
    cook on low for 20 -30 mnutes or until just the top is a little loose.
    Have the oven set to broil and put the fry pan on the top rack and cook for 5 minutes or until the top is nice and set and browned.

    Take out of the oven and it should slide right out of the pan onto a plate. If not just run a spatula around the edges, it will loosen.
    Eat it right out of the oven ar as a cool snack later!
