But way more than shrooms! I used 3 kinds of onions and had some portobellos and spinach and leftover chicken to add to this concoction! Made 3 and they were killer good. Oh I forgot I had 2 tubs of grape tomatos that I used instead of a regular mater, worked out well!
Original recipe - add what you want like I did.
16 ounces fresh sliced mushrooms
1 medium onion, sliced
2 small zucchini or yellow squash, sliced
1 green pepper, chopped
3 to 4 tablespoons margarine
salt, garlic salt and pepper to taste
1 large ripe, firm tomato
1 10-inch pie shell, unbaked
1 cup mayonnaise
1 cup shredded mozzarella cheese
Saute mushrooms, onion, squash, and green pepper in margarine until tender but not soft; drain well.
Add salt and pepper to vegetables.
Place tomato slices in bottom of the unbaked pie shell; add cooked vegetables.
Mix mayonnaise and mozzarella cheese; spread over vegetables.
Bake uncovered at 350° for about 1 hour.
Get the party started!
Need a bigger pan!
Prepping them up!
Cheese time! Say Cheese!
Out of the oven! Yay!
