    Hey all you Vols out there! Here is some kick ass fried chicken! You can check back over the years and I don't ever deep fry but I just had to try this new recipe, you see it had all kinds of heat added to it!
    I'm giving you the regular recipe, I made a huge batch. I used Crystals as my hot sauce, feel free to use your favorite!

    Recipe:
    1/2 cup butter milk
    2 Tbsp crystals hot sauce
    8 chicken pieces
    1/2 cup flour
    1/2 cup panko bread crumbs ( or your favorite)
    1 recipe hot seasoning (recipe below)
    2 cups veggie oil
    1 recipe hot baste (recipe below)

    Combine buttermilk and hot sauce in a large bowl, add chicken and marinate for 1 hour.

    Combine flour, panko and hot seasoning in a large bowl. Dredge chicken pieces in flour mixture.

    Heat oil in a cast iron skillet over med high to about 160 degrees. Add chicken skin side down and fry just like regular fried chicken till done or about 165 degrees. Remove chicken and drain on paper towels, Fry the chicken in batches so you don't get them crowded in the pan.

    Drizzle with hot baste and serve with cold beer!


    The hot seasoning:
    1 tsp paqprika
    1 tsp chili powder
    1 tsp dried oregano
    1 tsp basil
    1 tsp onion powder
    1 tsp garlic powder
    1 tsp black pepper
    1/2 tsp kosher salt
    1/2 tsp cayene pepper
    Combine spices and grind to very fine in a coffee grinder.

    The hot baste:
    1/4 cup butter melted
    1/4 cup crystals hot sauce
    1 Tbsp honey
    1 tsp garlic powder
    Combine in a bowl untill well blended

    The process!


    Fried up and the hot baste applied! Oh yeah I used coffee filters instead of paper towels to drain!


    Served with a pasta salad(store bought!)

    But that pasta salad looks aweful. Who ever made it over cooked the Fusilli. :p

    Well this was my first try at it and i followed these directions:

    Get oil up to 360 and put in chicken skin side down and fry for 6-7 minutes; turn chicken, put heat to low and cover and fry for 10 minutes. Uncover and cook for about 4 minutes to crisp it up. Should end up around 170 degrees, tent with foil.

    The first batch was kinda burnt! :D But I got better as I went along!
