    This was killer! Served with mashed potatos and gravy, this will put on a few pounds, right Megi!!!
    Not a beet in sight!




    3 tablespoons olive oil
    1 large green bell pepper, diced
    1 large yellow onion, diced
    4 cloves garlic, finely chopped
    3 shallots, finely chopped
    2 large eggs, lightly beaten
    1/4 cup fresh parsley
    1 tablespoon chopped fresh chopped thyme
    1 pound ground sirloin
    1/2 pound ground turkey
    1/2 pound ground pork
    1 cup panko
    1 1/2 cups ketchup, reserve 1/2 cup for later
    4 tablespoons red wine vinager, 2 tablespoons each
    1/2 cup tomato sauce
    2 tablespoons honey
    2 tablespoons prepared mustard
    1 teaspoon hot sauce
    salt and pepper to taste
    garnish with curley leaf parsley

    Preheat oven to 450.
    Heat oil in a large skillet over medium high heat.
    Add bell pepper and onion and cook for five minutes. Stir in garlic and shallots and cook for two minutes.
    Set aside to cool.
    In large bowl, whisk together eggs and herbs.
    Add meat, panko, 1/2 cup ketchup, 2 tablespoons red wine vinager, and cooled vegetables; mix just until combined. Pack meat mixture into a 9x5x3-inch loaf pan. In a meduim bowl, whisk together remaining vinager, tomato sauce, honey, mustard, hot sauce, salt and pepper. Brush 3/4 mixture over entire loaf. Bake 1 hour and 15 minutes. Remove from oven and stand 10 minutes before slicing. Garnish with fresh leaf parsley.. Serve remaining sauce with meatloaf.

    DAMNATION!!!! I was planning on making something "light" for dinner. Just reading the recipe made my mouth water. I may have to retaliate with an obnoxiously fattening dessert. I dunno, deep fried snicker bars and mayo maybe...

    Looks great but serve some smoked Hambone homemade pea soup as a starter !
