    Please if willing to share between now and Christmas ...

    Your family's handed down recipes for stuffing, inside the bird or baked separately, in the oven.

    My mother-in-law passed away without even having a recipe for hers (which was positively delicious) and I have tried & tried to match it to no avail.

    All contributions gratefully accepted!

    I'll write mine up when I get a chance, it's a Louisiana rice type stuffing.

    Cajun style

    I start with the giblet packet and put it in a 3 qt pressure cooker with 2 cups water, cook till tender which is thirty minutes at 10 pounds (1.5 hrs with no pressure).
    chop 1 large bell pepper green or ripe , chop quarter pound of breakfast sausage fine, 1/4 cup chopped jalapenos or less depending on how hot. 1/2 cup finely chopped onion or 3 tbs onion powder, 1 tsp chicken bouillon or 2 bouillon cubes, 1 teaspoon anchovies finely chopped or 3 teaspoons fish sauce. 1 small can chopped olives, black or green, pimentos are fine.


    Remove giblets from pan and set aside to cool when tender.
    you should have about 3 cups of broth add water if necessary. add your chopped ingredients to broth plus 1 full cup basmati rice, bring to boil and turn heat down to low simmer 10 minutes, you don't want rice completely done.
    while rice and veggies are simmering dice your giblets fine, there is normally a lot of meat on the neck, don't waste it..
    when your rice and veggies are ready stir in your chopped giblets.
    measure 1 cup salad croutins.
    add your stuffing 3 tablespoons at a time to the cavities of your bird both crop and body cavity layer with the dry croutons(they will absorb excess moisture) this should fill a 12-15 pound bird with no extra, adjust amount for larger bird. no need to add cooking time because stuffing is hot.

    I am a from "scratch" (for most things, anyway) cook!

    As for stuffing made from "White Castle Rat Burgers" I'd sooner die ...

    And probably *would* at that! Ha! Ha!

    I do not have a pressure cooker, so will take all the ingredients listed with the exception of the neck, gizzards (I mean giblets, which I usually boil up and feed to the cat) ...

    And do my magic with my regular pots and pans! I do enjoy cooking, *not* cleaning up the kitchen after, however!

    The rice, veggies, sausage, a little of the chopped jalapenos, plus the chopped black olives (my favorite kind) and salad croutons sound yummy. Thanks!
