Made this kick ass roast during the Gator win Saturday night! A little bit of work and you have a roast beef like you never had before. I just wish I took it out 5 minutes sooner, more bloody!!
A little variation from the original recipe, I am calling it - Injected, marinated, studded, salt encrusted roast beef!!
9 Lb. sirloin tip roast beef.
Inject with;
store bought cajun butter
For the marinade;
1/2 cup EVOO
1/4 cup minced onion
1 Tbsp garlic powder
1 tsp basil
1/2 tsp marjoram
1/2 tsp thyme
1/4 tsp black pepper
For studding; 3 cloves garlic, slivered
For the crust;
3-5 lbs of kosher salt
1.5 - 2 cups water
Marinade the roast for at least an hour or up to overnite.
Pre heat oven to 350
inject roast with cajun butter
Stud with garlic slivers, I use a oyster shucker to make my incisions, just push and slide the garlic slivers right in.
Make a paste of the water and salt. Line a roasting pan with tin foil and put a layer of salt down.
Place roast on the pan and pack the remaining salt around and seal well.
Bake until 130, thats when I took this one out. Thats when you get to break the salt crust with a hammer!.
Time to slice and hope you get a slice with some garlic in it!
