We were going to do a goose and a prime rib, but my wife decided on a turkey and a prime rib because we have some finicky eaters coming over.
So, I'm doing the turkey and prime rib on the water smoker filled with spiced apple juice.
My wife is making a bunch of stuff and started cooking on Monday, I don't even know what it's going to be.
We made home made eggnog last night with an entire fifth of Myer's Dark Rum in it. It will certainly warm you up.
Probably along these lines...
Main Ingredients
2 each 8oz. Rib Eye steaks, 1/2 lb Stilton Cheese (softened), 1 stick unsalted butter (softened), 1-1/2 cup dry white wine, 4 Tsp. freeze-dried green peppercorns, 1 cup heavy cream, 4 Tsp. fresh chopped parsley
Cooking Instructions
In a bowl mix cheese and butter together until mixture is smooth. In a saucepan boil the wine with the peppercorns until it is reduced to 1 tablespoon, add the cream and boil the liquid until it is reduced by one half. Reduce the heat to moderately low, whisk the cheese mixture a little at a time into the cream mixture, then whisk in the parsley. Remove the pan from the heat and keep the sauce warm. Preheat a grill pan or charcoal grill. Season steaks with salt and pepper. Grill steaks for 4 to 5 minutes on each side for medium rare. Let the steaks stand for 5 minutes until serving. Serve the stilton sauce on the side and garnish with watercress.
